When I go to cupcake bakeries, I always try their coconut cupcakes. I just love the flavor of coconuts. So, the other day I stumbled upon Bon Appétit’s Vanilla Bean Coconut cupcake recipe and had to try it. I will say that the coconut flavor was not as intense as I would have preferred and at first, it tasted quite bland. However, after refrigerating it for a few hours, I ate one cold, and it was delightful. The sugar wasn’t as overpowering as it was at room temperature so I was able to taste the coconut flavor a bit more. I’m not sure why that is, but if you know, please enlighten me. Vanilla Coconut Cream Cheese Frosting
1 package of cream cheese – 8 oz (soften)
1 stick of butter – ½ cup (soften)
2 cups of powder sugar
1 vanilla bean (scrap seeds into frosting)
3 tbsp of condense coconut milk
½ tsp of coconut extract
Mix everything together. Chill before piping on cupcakes.
